Asian Steamed Chicken Dumplings Recipe

Ingredients : 
- 2 courgettes, ends trimmed and halved widthways
- 1 carrot, peeled, ends trimmed and halved widthways
- 2 tablespoons toasted peanuts, roughly chopped
- finely grated rind and juice of 1 unwaxed lime
- 6 tablespoons gluten-free sweet chilli sauce
- ½ teaspoon gluten-free Thai fish sauce

For the dumplings
- 2 spring onions, roughly chopped
- 2.5 cm (1 inch) piece fresh root ginger, peeled and chopped
- 1 red chilli, deseeded and chopped
- 1 small bunch of fresh coriander
- 1 large boneless, skinless chicken breast, about 200 g (7 oz), cut into chunks
- 1 teaspoon gluten-free light soy sauce

Preparation Method :
1) First, make the dumplings. Place the spring onions, ginger, chilli and coriander in a food processor and blitz until finely chopped. Add the chicken and soy sauce and pulse again until combined. Transfer the mixture to a bowl and shape into 12 small balls, using wet hands.

2) Place the dumplings in a steamer over a pan of simmering water and steam for about 15 minutes or until cooked through.

3) Meanwhile, using a spiralizer fitted with a 3 mm (⅛ inch) spaghetti blade, spiralize the courgettes and carrot.

4) Place the spiralized vegetables in a bowl with the peanuts. Mix together the lime rind and juice, sweet chilli sauce and fish sauce in a separate small bowl, then pour over the courgettes and carrot, reserving a little. Stir well to coat the vegetables in the dressing.

5) Divide the vegetables between 2 plates and top with the chicken dumplings. Pour over the reserved dressing and serve immediately.
