Mixed Vegetable Ribbon Pickle Recipe

Serves : servings 
Preparation time : 10 minutes, plus salting and marinating

Ingredients : 
- 1 carrot, peeled, ends trimmed and halved widthways
- 1 cucumber, ends trimmed and cut into 4 pieces widthways
- 1 fresh golden beetroot, scrubbed and ends trimmed
- 125 g (4 oz) radishes, thinly sliced
- 2 tablespoons sea salt flakes
- 200 ml (7 fl oz) white wine vinegar
- 75 g (3 oz) caster sugar
- 100 ml (3½ fl oz) water
- 1 teaspoon yellow mustard seeds
- 2 teaspoons fennel seeds
- 4 tablespoons roughly chopped dill

Preparation Method :
1) Using a spiralizer fitted with a ribbon blade, spiralize the carrot, cucumber and beetroot.

2) Place the spiralized vegetables in a colander standing over a bowl, add the radishes and sprinkle over the salt. Toss to combine and leave to stand for 20 minutes. Rinse under cold running water, then drain well.

3) Place the vinegar, sugar and measurement water in a large jar or non-reactive bowl and stir until the sugar has dissolved. Add the mustard and fennel seeds and dill. Stir in the drained vegetables and seal the jar or cover the bowl. Chill in the refrigerator for at least 20 minutes before serving.
