Spicy Carrot And Coriander Fritters Recipe

Ingredients : 
- 200 g (7 oz) carrots, peeled, ends trimmed and halved widthways
- 1 small onion, ends trimmed
- 50 g (2 oz) gram flour
- 1 teaspoon gluten-free baking powder
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- ½ teaspoon ground turmeric
- ½ teaspoon salt
- 2 eggs, lightly beaten
- 100 ml (3½ fl oz) buttermilk or natural yogurt
- 1 garlic clove, crushed
- 2 tablespoons chopped fresh coriander
- 1 tablespoon olive or sunflower oil, for frying

To serve
- cucumber dip
- lemon wedges

Preparation Method :
1) Using a spiralizer fitted with a 3 mm (⅛ inch) spaghetti blade, spiralize the carrots and onion.

2) In a large bowl, mix together the flour, baking powder, spices and salt. Stir in the eggs and buttermilk or yogurt to make a smooth batter. Add the spiralized vegetables, the garlic and coriander and mix until combined.

3) Heat a little of the oil in a large nonstick frying pan over a medium heat. Cooking 4 fritters at a time, add heaped tablespoons of the batter to the pan, flatten slightly and cook for 3 minutes on each side, until golden. Repeat until all the batter is used up. Serve the fritters with a cucumber dip and lemon wedges to squeeze over.
