Apple, Fennel And Gorgonzola Salad Recipe

Ingredients : 
- 1 large fennel bulb, ends trimmed and leafy tops chopped
- 1 large red eating apple, ends trimmed
- 1 large green eating apple, ends trimmed
- 125 g (4 oz) radishes, thinly sliced
- 75 g (3 oz) pea shoots
- 50 g (2 oz) walnut halves
- 125 g (4 oz) Gorgonzola cheese, broken into small pieces

For the dressing
- 2 tablespoons extra virgin olive oil
- 2 tablespoons cider vinegar
- 2 teaspoons gluten-free wholegrain mustard
- 2 teaspoons honey
- salt and freshly ground black pepper

Preparation Method :
1) First, make the dressing. In a small bowl, whisk together all the dressing ingredients and season to taste with a little salt and pepper.

2) Using a spiralizer fitted with a ribbon blade, spiralize the fennel and apples. Snip any really long ribbons into shorter lengths with scissors.

3) Place the spiralized fennel and apples in a bowl and pour over half the dressing. Add the radishes and toss gently to coat.

4) Divide the pea shoots between 4 plates or arrange on a platter, then add the apple and fennel mixture. Scatter over the walnuts, cheese and chopped fennel tops. Drizzle over the remaining dressing and serve immediately.
