Courgetti Egg Rolls With Smoked Salmon And Avocado Recipe

Ingredients : 
- 1 courgette, ends trimmed and halved width ways
- 3 eggs
- cooking spray oil or a little sunflower oil, for frying
- 1 ripe avocado
- 4 slices smoked salmon or trout, cut into strips
- salt and freshly ground black pepper

Preparation Method :
1) Using a spiralizer fitted with a 3 mm (⅛ inch) spaghetti blade, spiralize the courgette. Roughly snip any extra-long spirals in half with scissors. Place the spiralized courgette on a clean tea towel or kitchen paper and gently squeeze out any excess liquid.

2) In a small jug, lightly beat together the eggs with salt and pepper.

3) Heat a small nonstick frying pan over a medium heat and spray or brush with oil. Add half the spiralized courgette and stir-fry for 1 minute, then pour over half the eggs and swirl the pan to coat the base. Cook for 2–3 minutes, until the base is set, then flip over the omelette and cook for a further 1 minute, until set.

4) Meanwhile, halve, stone and peel the avocado and cut into strips.

5) Slide the omelette on to a board, add half the smoked salmon or trout and avocado and roll up. Serve immediately. Repeat with the remaining ingredients to make 2 egg rolls.
