Cauliflower Crust Mediterranean Pizza Recipe

Ingredients : 
For the base
- 550 g (1 lb 2 oz) cauliflower florets
- 1 teaspoon dried oregano
- ½ teaspoon garlic salt
- 25 g (1 oz) vegetarian pasta cheese or Parmesan cheese, grated
- 1 egg, beaten
- salt and freshly ground black pepper

For the topping
- ½ courgette, ends trimmed
- 2 tablespoons sundried tomato paste
- 25 g (1 oz) mozzarella cheese, grated
- ½ yellow pepper, cored, deseeded and diced
- 6 cherry tomatoes, halved
- 75 g (3 oz) soft goats’ cheese, roughly chopped
- basil leaves

Preparation Method :
1) Place a large nonstick baking sheet in a preheated oven, 200ºC (400ºF), Gas Mark 6.

2) Place the cauliflower in a food processor and pulse until it resembles rice. Transfer to a microwavable bowl, cover with clingfilm and pierce the top, then cook on full power in a microwave for 4 minutes, until tender. (Alternatively, cook in a steamer over a pan of boiling water.) Leave to cool slightly, then place in a clean tea towel and squeeze over a sink to remove the excess liquid. Return to the bowl and add the oregano, garlic salt, vegetarian pasta cheese or Parmesan, egg and salt and pepper and mix well.

3) Transfer the mixture to a piece of nonstick baking paper. Using your hands, flatten into a thin circle, about 22 cm (9 inch) in diameter, then carefully transfer to the hot baking sheet. Bake for 12–15 minutes, until golden brown.

4) Meanwhile, using a spiralizer fitted with a ribbon blade, spiralize the courgette.

5) Spread the tomato paste over the base and sprinkle over the mozzarella. Top with the spiralized courgette, yellow pepper and tomatoes, then dot over the goats’ cheese.

6) Return the pizza to the oven and bake for 5–7 minutes or until the vegetables are cooked through and the cheese is melted. Scatter over the basil and serve immediately.
