dijon grilled chicken recipe

Serves : servings 

Ingredients : 
- 4 tbsp olive oil
- 8 boneless chicken thighs, skin on
- zest and juice of 1 lemon
- 1 tbsp red wine vinegar
- 1 tbsp wholegrain mustard
- 3 tbsp Dijon mustard
- 1 tsp dried herbes de Provence (or similar)
- sea salt and freshly ground black pepper

Preparation Method :
1) Preheat your grill to a medium setting.

2) Heat a tablespoon of the oil in an ovenproof frying pan. Season the chicken with salt and pepper, then put it skin-side down in the pan and fry for 2–3 minutes.

3) Whisk the rest of the olive oil with the lemon zest and juice, the red wine vinegar, mustards and herbs. Add a little salt and some black pepper.

4) Pour this mixture over the chicken, then put the pan under the grill and grill the chicken for 10 minutes – or if you prefer, transfer the chicken to a baking tray, add the olive oil and mustard mixture, then put the tray under the grill. You will probably find the mixture separates a little but don’t worry – it will be fine.

5) Turn the chicken over and baste it with the pan juices. Grill for another 5–6 minutes until the skin is a deep golden brown and the chicken is completely cooked through. Serve with the pan juices.
