indian basmati rice recipe

makes: 12 servings (½ cup each)

Ingredients : 
- ½ cup chopped onion (1 medium)
- 1 tablespoon butter
- 1 cup basmati rice
- 2⁄3 cup snipped dried apricots
- 1 medium carrot, bias-sliced
- 1 teaspoon ground turmeric
- ½ teaspoon ground cumin
- 1⁄8 teaspoon crushed red pepper
- 1 14.5-ounce can reduced-sodium chicken broth
- ¼ cup water
- 1 6-ounce package frozen snow pea pods, thawed
- 2 tablespoons snipped fresh parsley
- 2 tablespoons slivered almonds, toasted

Preparation Method :
1) In a medium saucepan cook onion in hot butter over medium heat about 5 minutes or until onion is tender. Stir in uncooked rice. Cook and stir for 4 minutes. Stir in apricots, carrot, turmeric, cumin, and crushed red pepper.

2) Carefully stir broth and the water into rice mixture in saucepan. Bring to boiling; reduce heat. Cover and simmer for 18 to 20 minutes or until liquid is absorbed and rice is tender. Stir in pea pods and parsley. Sprinkle individual servings with almonds.
