buffalo wings recipe

Serves : servings 

Ingredients : 
- 1kg chicken wings, tips removed and split into ‘drumettes’ and ‘flats’
- sea salt
- vegetable oil, for frying
- celery sticks

- 50g butter
- 2 garlic cloves, crushed or grated
- 120ml hot sauce (an American brand such as Frank’s is traditional)
- 1 tbsp cider vinegar
- 1 tsp sugar
- sea salt and freshly ground black pepper

- 100g blue cheese (a creamy one such as Saint Agur is good)
- 1 small onion, very finely chopped
- 100ml buttermilk
- 150ml crème fraiche
- 1 tsp cider vinegar

Preparation Method :
1) If you have time, prepare the wings by sprinkling them generously with salt, then lay them out on a rack in the fridge overnight. This will help them crisp up well when you fry them. An hour before you want to cook the wings, remove them from the fridge and allow them to come up to room temperature. Pat them dry.

2) To make the hot sauce, melt the butter in a small pan and add the garlic. Cook it gently for a minute or so, then whisk in the other ingredients. Taste for seasoning and add salt and pepper as necessary.

3) To make the blue cheese sauce, mash the cheese with the onion, buttermilk, crème fraiche and cider vinegar.

4) Half fill a deep fryer or a large saucepan with oil and heat to 160°C. Cook the wings in batches for about 10 minutes each batch, then drain them thoroughly on kitchen paper.

5) Raise the temperature of the oil to 190°C. Return the wings to the pan, again in batches, and cook them for a further 2 minutes until very crisp and a deep golden brown. Put the wings on kitchen paper to drain, then pile them into a bowl and smother them in the hot sauce. Serve them with the blue cheese sauce and some celery sticks on the side.

6) If you do want to bake the buffalo wings instead of frying, preheat the oven to 200°C/Fan 180°C/Gas 6 and cook them for about 45 minutes, turning them regularly.
