smoked chicken salad with peaches recipe

Serves : servings 

Ingredients : 
- 1 large smoked chicken breast
- 200g salad leaves, such as lamb’s lettuce, pea shoots and baby kale
- 2 ripe peaches, cut into wedges
- 50g pecans, lightly toasted
- 1⁄2 cucumber
- fresh thyme or oregano leaves

- 1 tsp wholegrain mustard
- 2 tbsp olive oil
- pinch of sugar
- 1 tbsp sherry vinegar
- a few rosemary leaves, very finely chopped
- sea salt and freshly ground black pepper

Preparation Method :
1) Slice the chicken as thinly as you can. Arrange the salad leaves on a large platter and top with slices of chicken, peach wedges and pecans. Peel and deseed the cucumber and cut it into little crescents, then add those to the platter.

2) Whisk the dressing ingredients in a small jug and season with salt and pepper to taste. Drizzle the dressing over the salad, then sprinkle the herbs on top.
