chilli and garlic omelette recipe

Serves : servings 

Ingredients : 
- 1 tbsp olive oil
- 2 spring onions, finely chopped
- 2 garlic cloves, finely chopped
- 10g root ginger, finely chopped
- 1 red chilli, deseeded and finely chopped (or sliced – up to you)
- 2 eggs, beaten
- generous pinch of turmeric
- 1⁄2 tsp garam masala or curry powder
- a few sprigs of fresh coriander
- sea salt

Preparation Method :
1) Heat the olive oil in a frying pan. Add the spring onions and fry them for just a couple of minutes – you want them to have some bite. Add the garlic, ginger and chilli and stir for another minute.

2) Crack the eggs into a bowl and add the turmeric, garam masala and a good pinch of salt. Whisk briefly, then pour the mixture into the frying pan and swirl it around so it completely covers the base of the pan. Let the omelette cook through, then sprinkle it with coriander and slide it on to a plate. If you prefer, roll the omelette up first, then transfer it to a plate. Eat at once.
