vanilla pound cake recipe

Preparation time : 30 minutes 

Ingredients : 
- 1 cup (2 sticks; 8 ounces) unsalted butter, at room temperature
1½ cups sugar
- 1 tablespoon Madagascar vanilla extract (see notes)
- 4 large eggs
- 1¾ cups all-purpose flour
- ¼ teaspoon salt

Preparation Method :
1) Preheat the oven to 325°F. Grease an 8½ × 4½ × 2 ¾-inch loaf pan with butter or cooking spray and set aside.

2) In a large bowl, with a hand (or stand) mixer, cream the butter and sugar until fluffy, about 2 minutes. Scrape down the sides of the bowl with a spatula, then add the vanilla and eggs and beat until combined.

3) Slowly add the flour and salt and beat on low speed until combined.

4) Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool in the pan, then remove from the pan, slice, and serve.

Because you want vanilla flavor to really come through, I would recommend using a high-quality vanilla extract. You can really take this pound cake to the next level by adding seasonal berries to it as a topping (in the summer, think freshly sliced strawberries; in the winter, think adding some cranberries or frozen berries).
