sunday red sauce recipe

Ingredients : 
- 1 tbsp (15 ml) extra virgin olive oil
- 1 medium white or yellow onion, diced
- 1 green bell pepper, diced
- 1 tsp dried oregano
- ¼ tsp crushed red pepper flakes
- 3 cloves garlic, minced
- ¼ cup (60 ml) red wine (optional, for deglazing the vegetables)
- 2 tbsp (35 g) tomato paste
- 1 (29-oz [820-g]) can tomato sauce
- 1 (29-oz [820-g]) can crushed tomatoes
- Salt and freshly ground black pepper

Preparation Method :
1) In a large stock pan, heat the olive oil over medium heat. Add the onion and green bell pepper and cook until onion is translucent and green bell pepper is tender, about 8–10 minutes. Add in the dried oregano, crushed red pepper flakes and garlic and cook for another 1–2 minutes until spices are fragrant and garlic has almost melted into the onion/pepper mixture.

2) Add the red wine and use a wooden spoon to gently scrape up any browned bits of onion. Whisk in the tomato paste and let simmer for 5–10 minutes until thick.

3) Add in the tomato sauce, crushed tomatoes and pinch each of salt and pepper and reduce heat to low. Cover, stirring occasionally, for at least 30 minutes. Season to taste and serve with anything!
