garlic saffron asparagus recipe

Serves : servings 

Ingredients : 
- 2 large garlic cloves
- ⅛ teaspoon crushed saffron threads
- Kosher salt
- 1 pound fresh asparagus, trimmed
- 2 tablespoons unsalted butter

Preparation Method :
1) Using a mortar and pestle, mash the garlic, saffron, and a generous pinch of salt to a paste.

2) In a large skillet, bring about ½ inch of water to a simmer over medium heat. Add the asparagus, cover, and cook until the spears are bright green but still crisp, 1 to 2 minutes. Remove the asparagus and dump out the water. Wipe the skillet dry.

3) Melt the butter in the skillet, and then add the garlic paste. Cook, stirring, until the garlic is fragrant, about 30 seconds. Add the asparagus and toss to coat. Immediately transfer the asparagus to a serving dish. Season to taste with salt if necessary.

*tip: Be careful not to overcook the asparagus in the simmering water. You want it to just begin to soften, as it will continue to cook when you remove it from the water.
