broiled salmon with herbs and mustard recipe

Serves : servings 

Ingredients : 
- 1¼ pounds boneless, skinless salmon fillet, at least 1 inch thick (see Tip)
- ¼ cup mixed chopped fresh tender herbs, such as lovage, tarragon, parsley, and dill
- 2 tablespoons sour cream or crème fraîche
- 4 teaspoons gluten-free Dijon mustard
- Kosher salt and freshly ground black pepper

Preparation Method :
1) Preheat the broiler with a rack placed 8 inches away from the heat source. Line a rimmed baking sheet with aluminum foil. Set the salmon on the foil. 

2) In a small bowl, stir together the herbs, sour cream, mustard, and salt and pepper to taste. Spread the mixture all over the top and sides of the salmon fillet.

3) Broil the salmon until the sauce is browned in spots and the fish is cooked to your liking, 4 to 6 minutes for medium-rare. 

tip :  Make sure to buy a nice thick piece of salmon so that it doesn’t overcook under the broiler.
