banh mi vietnamese sandwiches recipe

Ingredients : 
- 12 ounces pork tenderloin
- 2 tablespoons Asian sweet chili sauce
- 1 tablespoon reduced-sodium soy sauce
- 1 small cucumber, seeded and cut into thin strips
- 1 small red sweet pepper, cut into thin strips
- 1 medium carrot, shredded
- ¼ cup sliced green onions (2)
- ¼ cup bottled low-fat sesame ginger salad dressing
- 1 tablespoon lime juice
- 1 10-ounce loaf whole grain baguette-style French bread, split horizontally
- ¼ cup fresh cilantro leaves
- 1 fresh jalapeño chile pepper, seeded and thinly sliced*

Preparation Method :
1) Trim fat from pork. Cut pork crosswise into ½-inch slices. Press each piece with the palm of your hand to make an even thickness. In a small bowl combine chili sauce and soy sauce. Brush sauce mixture onto pork. In a greased grill pan or extra-large skillet cook pork over medium-high heat for 4 to 6 minutes or until slightly pink in center and juices run clear, turning once.

2) In a large bowl combine cucumber, sweet pepper, carrot, green onions, salad dressing, and lime juice.

3) Place pork slices on the bottom half of the baguette. Top with vegetable mixture, cilantro, jalapeño slices, and top half of baguette. Cut into six portions to serve.

*test kitchen tip: Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with chiles as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the chile peppers, wash your hands and nails well with soap and warm water.
