Sweet and sour fried potatoes recipe

Serves : servings 

Preparation time : 20 minutes (plus soaking and frying time)

Ingredients : 
1)  7 dried mu-err mushrooms
2)  2 leeks
3)  1 bunch chives
4)  650 g waxy potatoes
5)  6 tbsp peanut oil
6)  1 tbsp Sichuan peppercorns
7)  8 tbsp brown rice vinegar
8)  2 tbsp sugar
9)  4 tbsp soy sauce
10)  salt

Preparation Method :
1) Place the mushrooms in a bowl, pour hot water over and soak for approx. 15 minutes. Remove the stalks and the caps, and cut into fine strips. Wash the leeks and cut into fine strips. Wash the chives, shake dry and chop finely. Wash and peel the potatoes and pass through a vegetable grater. Place in a sieve, rinse with cold water and dry well using kitchen paper.

2) Heat a wok to a high temperature, add the peanut oil and fry the peppercorns for about a minute whilst stirring. Remove using a slotted spoon and add the potatoes to the now aromatic oil. Cook for 6 minutes until firm to the bite. Add the leeks and mushrooms after 3 minutes.

3) Mix the rice vinegar with the sugar and soy sauce, pour over the potatoes and continue to fry for approx. 2 minutes whilst stirring. Season to taste with salt and serve sprinkled with chives.
