Stuffed courgette flowers recipe

Serves : servings 

Preparation time : 20 minutes (plus cooking time)

Ingredients : 
1)  8 courgette flowers
2)  80 g long-grain rice
3)  1 onion
4)  1/2 bunch dill
5)  1/2 bunch mint
6)  8 tbsp tomato purée
7)  2 tbsp olive oil
8)  salt
9)  pepper

Preparation Method :
1) Remove the stamens and pistil from the courgette flowers. Remove the sepals and wash the flowers carefully.

2) Wash the rice, then drain. Peel the onion and chop finely. Wash the herbs, shake dry and also chop finely.

3) Mix the rice, herbs, tomato purée and olive oil, and season to taste with salt and pepper. Put about a teaspoon of filling in each courgette flower. Seal the edges of the flowers.

4) Place the stuffed flowers close to each other in a pan. Add enough salted water to just cover the flowers. Cook for approx. 30 minutes at a moderate temperature, adding water if necessary.
