Poached eggs with juniper berries recipe

Serves : servings 

Preparation time : 20 minutes (plus cooking time)

Ingredients : 
1)  2 onions
2)  1 tbsp clarified butter
3)  1 litre cider vinegar
4)  1 bay leaf
5)  1/2 tsp each of peppercorns and juniper berries
6)  3 allspice corns
7)  1 tsp mustard seeds
8)  8 eggs
9)  50 g sour cream
10)  100 g breadcrumbs, toasted in butter

Preparation Method :
1) Peel the onions and cut into thin rings. Heat the clarified butter in a frying pan and cook the onions until transparent.

2) In a saucepan, bring the vinegar to the boil with an equal quantity of water. Add the liquid to the onions and bring to the boil. Add the bay leaf and the seasoning seeds, and continue to boil.

3) Break the eggs one after the other into a bowl and slip them into the boiling liquid. Allow to cook gently until the egg white begins to thicken.

4) Then remove the eggs from the liquid using a slotted spoon and serve on plates. Add a little liquid with onions, and garnish with sour cream and toasted breadcrumbs on top. Serve as a main dish with fried potatoes.
