Egg and herb flans recipe

Serves : servings 

Preparation time : 30 minutes (plus cooking and frying time)

Ingredients : 
1) 6 eggs
2) 250 ml milk
3) 4 tbsp finely chopped herbs, e.g. wild garlic, parsley, dill
4) salt
5) pepper
6) 250 g green asparagus
7) 2 garlic cloves
8) 3 tbsp olive oil
9) 200 g cherry tomatoes
10) 1/2 bunch chives
11) 8 savoury mini flan cases

Preparation Method :
1) Break the eggs and mix with the milk, herbs and a little salt and pepper. Wash the asparagus, cut off the lower woody ends and cut the stalks into pieces measuring 3 cm. Cook for approx. 5 minutes in lightly salted water.

2) Peel the garlic and crush in a mortar with a little salt. Fry the asparagus pieces with the garlic in hot olive oil for approx. 7 minutes. Pour the egg mixture into the pan. Allow to thicken over a mild heat for approx. 5 minutes.

3) Wash the tomatoes and slice thinly. Wash the chives, dry and chop into small rolls. Cover the flan bases with the egg mixture and place the tomato slices on top. Serve sprinkled with chives.
