Tuna Nicoise Recipe

Serves : 4 servings 
Preparation time : 20 minutes

Ingredients : 
- 4 eggs
- 2 mugs/250g fusilli pasta
- 200g green beans

Dressing
- juice of a lemon
- 2 tablespoons mayo
- 2 tablespoons olive oil
- salt and pepper
- 1 teaspoon sugar

Salad
- 2 x 185g tins tuna
- 30 olives
- 12 anchovies
- 6 spring onions, chopped
- 250g cherry tomatoes, halved
- 1 tablespoon freshly chopped basil

Preparation Method :
1) Boil the eggs for 7 minutes and run under cold water until the eggs are cool enough to handle. Gently peel and set to one side until needed.

2) Cook the pasta and add the green beans for the final 5 minutes of cooking. Drain, rinse under the cold tap and return to the pan.

3) Mix together the dressing ingredients.

4) Arrange the salad between the 4 plates and drizzle over the dressing.

***TIP :
- Never wait for water to boil in a pan. Boil the water in the kettle first.
