Smoked Haddock Rosti With Creme Fraiche Dressing Recipe

Serves : servings 

Preparation time : 25 minutes 

Ingredients : 
- 3 medium potatoes, grated
- 300g smoked haddock, finely sliced
- 1 tablespoon olive oil
- salad

Dressing
- 4 tablespoons Creme Fraiche
- juice of a lemon
- 1 tablespoon freshly chopped parsley or basil

Preparation Method :
1) Squeeze the moisture out of the potatoes. Place in a bowl with the haddock and season well. Mix everything together.

2) Heat the oil in a large frying pan. Place about 1⁄8th of the mixture at a time in the pan and press down to flatten. Fry on a medium heat until browned on the bottom. Gently turn each rosti over to brown on the other side. They should take approximately 6–8 minutes to cook through.

3) Mix the dressing ingredients together, season, and serve everything together.
