Courgetti With Hherby Avocado Sauce Recipe

Serves : servings

Ingredients : 
- 2 courgettes, ends trimmed and halved widthways
- 1 ripe avocado
- 1 garlic clove
- juice of ½ lemon
- 4 tablespoons roughly chopped flat leaf parsley
- 25 g (1 oz) basil leaves
- 2 tablespoons olive or avocado oil
- cooking spray oil, for frying
- 25 g (1 oz) pine nuts, toasted
- salt and freshly ground black pepper

Preparation Method :
1) Using a spiralizer fitted with a 3 mm (⅛ inch) spaghetti blade, spiralize the courgettes.

2) Halve, stone and peel the avocado, then place in a food processor with the garlic, lemon juice, herbs and olive or avocado oil and blitz until smooth. Season to taste with salt and pepper.

3) Spray the base of a nonstick frying pan or wok with spray oil and heat over a medium heat. Add the spiralized courgettes and stir-fry for 3–4 minutes, until just tender. Remove from the heat and stir in the sauce to coat.

4) Divide the courgetti between 2 bowls, sprinkle with the pine nuts and extra pepper and serve immediately.
