Corn Cakes With Avocado Salad Recipe

Serves : servings

Ingredients : 
Dressing
- juice of a lime
- 2 tablespoons olive oil
- salt and pepper
- 1 teaspoon sugar

Corn Cakes
- 2 eggs
- 3⁄4 mug/100g self-raising flour
- 1 tablespoon crème fraîche
- 325g can sweetcorn, drained
- bunch spring onions, chopped
- 1 dessertspoon freshly chopped basil
- 1 dessertspoon freshly chopped chives
- 2 tablespoons olive oil
- 4 slices bread or a small ciabatta loaf, sliced

Salad
- 1 avocado, cut into small chunks
- 1 bag salad leaves
- 4 tomatoes
- 2 tablespoons olive oil

Preparation Method :
1) Mix the dressing ingredients together.

2) Beat together the eggs and flour. Add the crème fraîche and the drained sweetcorn, spring onions and herbs and mix well. Season with salt and pepper.

3) Heat the 2 tablespoons of oil in a large frying pan. Add the bread and fry on both sides until browned. Cut into strips or croutons.

4) Add the corn mixture to the frying pan, 1 tablespoon at a time, and cook on a medium heat until browned on both sides and cooked through.

5) Mix the salad ingredients together and serve the corn cakes on top. Drizzle the dressing over the salad.
