Chicken Parmigiana Recipe

Ingredients : 
- 1.5 ounces all-purpose flour (⅓ cup)
- ¼ teaspoon garlic powder
- ¼ teaspoon paprika
- ¼ teaspoon pepper
- 2 egg whites, lightly beaten
- 6 (4-ounce) skinless, boneless chicken breast halves
- 2 cups cornflakes, coarsely crushed
- Cooking spray
- 1 (26-ounce) jar low-fat pasta sauce (such as Healthy Choice)
- 3 ounces preshredded part-skim mozzarella cheese (about ¾ cup)

Preparation Method :
1) Preheat oven to 350°. Combine first 4 ingredients in a shallow dish. Place egg whites in a shallow dish. Place cornflakes in a shallow dish. Dredge each chicken breast in flour mixture. Dip each breast in egg whites; dredge in cornflakes.

2)  Arrange chicken in a 13 x 9-inch baking dish coated with cooking spray. Bake at 350° for 25 minutes or until crisp.

3) While chicken bakes, place pasta sauce in a medium saucepan, and cook over medium heat until thoroughly heated. Pour sauce over chicken, and sprinkle with cheese. Bake an additional 5 minutes or until cheese melts. Serves 6 (serving size: 1 chicken breast half and ½ cup sauce)

***Tip :
Be sure to add the cheese during the last five minutes of baking so it’s just melted and not burned. For an extra kick of flavor, use red pepper in the flour mixture.
