Smoked Salmon Muffins With a Herby Bechamel Sauce Recipe

Serves : servings 
Preparation time : 20 minutes 

Ingredients : 
- 4 breakfast muffins
- 120g pack smoked salmon
- 4 eggs

Sauce
- 125g butter, measure using packet
- 1 tablespoon plain flour
- 1 mug milk
- 1 tablespoon chopped, fresh parsley
- 1 tablespoon chopped, fresh chives

Preparation Method :
1) To make the sauce, melt the butter in a saucepan, add the flour and cook together for 30 seconds. Add the milk and bring back to the boil, stirring frequently. Add the herbs and mix. Leave to one side until needed.

2) Cut each muffin in half, horizontally, and toast. Butter the muffins and divide the smoked salmon between them.

3) Poach the 4 eggs, drain and place on top of the smoked salmon.

4) Reheat the sauce and pour over the top.
