Prawn and Pea Salad with Tarragon And Mint Recipe

Serves : servings 
Preparation time : 15 minutes 

Ingredients : 
Salad
- 2 mugs frozen peas, defrosted
- 500g cooked prawns
- 6 spring onions, chopped
- 2 little gem lettuces, sliced
- 2 tablespoons fresh tarragon, chopped
- 2 tablespoons fresh mint, chopped

Dressing
- 4 tablespoons mayo
- juice of a lemon
- 2 tablespoons olive oil
- salt and pepper

Preparation Method :
1) Cook the peas in boiling water for 2 minutes. Drain and rinse under cold water.

2) Mix together the dressing ingredients.

3) Arrange the salad ingredients on 2 plates. Drizzle the dressing over the top.
