Pickled Cucumber And Dill Spirals Recipe

Serves : 6 - 8 servings 
Preparation time : 10 minutes, plus 1 day pickling

Ingredients : 
- 1 cucumber, ends trimmed and cut into 4 pieces widthways
- 150 ml (¼ pint) white wine vinegar
- 300 ml (½ pint) warm water
- 1 teaspoon caster sugar
- 2 teaspoons sea salt
- 25 g (1 oz) dill, roughly chopped
- 4 garlic cloves, peeled and smashed
- 1 teaspoon black peppercorns

Preparation Method :
1) Using a spiralizer fitted with a ribbon blade, spiralize the cucumber. Dry the spiralized cucumber on kitchen paper.

2) Place the vinegar, measurement water, sugar and salt in a non-reactive bowl and whisk together until the sugar and salt have dissolved. Stir in the dill, garlic and peppercorns.

3) Place the spiralized cucumber in a 750 ml (1¼ pint) pickling jar, with a lid. Pour the vinegar mixture over the cucumber and stir well.

4) Seal the jar and leave in the refrigerator for at least 1 day before serving. The pickled cucumber will keep for up to a few weeks in the refrigerator.
