Cajun Chicken Pannini Recipe

Serves : servings

Ingredients : 
- 2 tablespoons Cajun seasoning
- 2 chicken breasts
- 1 tablespoon olive oil
- 2 small ciabatta loaves, cut in half and sliced horizontally
- 2 tablespoons mayo
- 2 tomatoes, sliced
- 1 large avocado, peeled and sliced
- 300g mozzarella cheese

Preparation Method :
1) Put the Cajun seasoning on a plate and press the chicken breasts into it, so that it is evenly distributed.

2) Heat the oil in a frying pan and fry the chicken breasts on a fairly high heat for 2 minutes each side. Turn down the heat and fry for 4 minutes each side, with a lid on the pan. Take care not to burn the Cajun seasoning.

3) Take the chicken out of the pan and leave to rest for a couple of minutes. Slice into thin strips.

4) Toast the ciabatta lightly under the grill. Spread the toasted bread with mayo and arrange the chicken, tomatoes and avocado on the bread.

5) Pull apart the mozzarella and place over the top. Put under the grill for 4–5 minutes, or until the cheese begins to bubble and go brown.
