Easy Tiramisu Recipe

Ingredients : 
CAKE
- 1 box (16.25 oz) white cake mix with pudding in the mix
- 1 cup water
- ⅓ cup vegetable oil
- ¼ cup brandy or 1½ teaspoons brandy extract plus ¼ cup water
- 3 egg whites

ESPRESSO SYRUP
- ¼ cup instant espresso coffee powder or granules
- ½ cup boiling water
- 2 tablespoons corn syrup

TOPPING
- 1 package (8 oz) cream cheese, softened
- ½ cup powdered sugar
- 2 cups whipping cream
- 1 tablespoon unsweetened baking cocoa, if desired

Preparation Method :
1) Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 13x9-inch pan with shortening or cooking spray.

2) In large bowl, beat cake ingredients with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Pour batter into pan.

3) Bake 34 to 39 minutes or until toothpick inserted in center comes out clean or cake springs back when touched lightly in center. Cool 15 minutes.

4) With long-tined fork, pierce top of warm cake every ½ inch. In small bowl, mix espresso powder and boiling water. Stir in corn syrup. Brush espresso syrup over top of cake. Cool completely in pan on cooling rack, about 1 hour.

5) In medium bowl, beat cream cheese and powdered sugar with electric mixer on low speed until mixed. Beat on high speed until smooth. Gradually add whipping cream, beating on high speed about 2 minutes or until stiff peaks form. Spread mixture over top of cake; sprinkle with cocoa. Store covered in refrigerator.

** Sweet Success Place the cocoa in a small, fine-mesh strainer. Hold it over the Tiramisu and tap the edge of the strainer with a spoon to evenly sprinkle the cocoa.
