Courgette, Tomato And Mozzarella Salad Recipe

Serves : servings 
Preparation time : 10 minutes, plus marinating

Ingredients : 
- 2 courgettes, ends trimmed and halved widthways
- 300 g (10 oz) cherry or baby plum tomatoes, halved
- 25 g (1 oz) pitted black olives
- 1 x 250 g (8 oz) ball buffalo mozzarella cheese, drained
- 25 g (1 oz) pine nuts, toasted
- 12 basil leaves

For the dressing
- 1 garlic clove, crushed
- 1 teaspoon aged balsamic vinegar
- 1 teaspoon capers, chopped
- juice of 1 lemon
- 2 tablespoons olive oil
- freshly ground black pepper

Preparation Method :
1) Using a spiralizer fitted with a ribbon blade, spiralize the courgettes. Roughly snip any extra-long ribbons in half with a pair of scissors.

2) Place the spiralized courgettes in a large bowl and add the tomatoes and olives.

3) To make the dressing, whisk together all the dressing ingredients in a small bowl. Pour the dressing over the salad, reserving a little, then leave to marinate for about 10 minutes.

4) Place the courgettes, tomatoes and olives on a platter. Tear the mozzarella into pieces and arrange over the salad, then scatter over the pine nuts and basil leaves. Drizzle with the remaining dressing and serve immediately.
