Spicy Chicken On Lettuce Recipe

Serves : servings 

Ingredients : 
- 1 tbsp olive oil
- 300g boneless, skinless chicken thighs, minced or finely chopped
- 1 garlic clove, finely chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1⁄4 tsp ground cinnamon
- 1⁄4 tsp ground ginger
- pinch of ground cloves
- pinch of cayenne
- juice of 1 lemon
- 50ml chicken stock
- 1 tsp honey
- sea salt and freshly ground black pepper

TO SERVE
- 2 or 3 little gem lettuces, leaves separated
- 1⁄2 small red onion, finely diced
- 2 tbsp each of finely fresh chopped coriander, mint and parsley
- sumac, for dusting

Preparation Method :
1) Heat the olive oil in a frying pan. Add the chicken and fry it over a high heat for a couple of minutes until it’s lightly cooked. Add the garlic, then sprinkle in all the spices and season with salt and pepper.

2) Pour in the lemon juice and the chicken stock, then stir in the honey. Simmer until the sauce has reduced to just about nothing – the mixture needs to be quite dry. Remove the pan from the heat and set it aside to cool a little.

3) To serve, pile the chicken mixture on to little gem leaves. Mix the onion and herbs together as a garnish and sprinkle them over the chicken. Finally, dust with a little sumac and serve immediately.
