Chocolate Mousse Recipe

Serves : servings 

Ingredients : 
- 125g dark chocolate (at least 70% cocoa solids)
- 4 eggs, separated
- 50g icing sugar
- 25ml rum (optional)
- 150ml whipping cream
- grated chocolate, to garnish
- extra cream, to serve (optional)

Preparation Method :
1) Break up the chocolate and put it in a heatproof bowl. Set the bowl over a saucepan of barely simmering water, making sure that the bottom of the bowl doesn’t touch the water.

2) When the chocolate has melted, take the pan off the heat and beat in the egg yolks one at a time, then add the icing sugar and the rum, if using. Don’t worry if the mixture begins to look grainy when you start adding the egg yolks – it will be smoother by the time you have incorporated the rum and sugar. It will be quite thick at this point.

3) Whisk the cream until it is full of air but still fairly soft. Fold the cream into the chocolate mixture, until it is completely combined. Whisk the egg whites until they form stiff peaks. Loosen the chocolate mixture with a tablespoon or so of the whites, then fold in the rest, trying to keep as much of the air in them as possible. You should end up with a slightly bubbly but still pourable mixture.

4) Divide the mixture between 6 ramekins and chill them for several hours until set. They should be firm to touch. Decorate each one with grated chocolate and a little extra cream if you like.
