chicken fajitas recipe

Serves : servings 

Ingredients : 
- 600g skinless, boneless chicken breasts or thighs, cut into strips
- 2 tbsp olive oil
- 2 red onions, cut into wedges
- 2 red peppers, deseeded and sliced
- 1 green pepper, deseeded and sliced

MARINADE
- juice of 2 limes
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garlic powder
- 1 tsp dried oregano
- 2 tsp chipotle paste
- 1 tbsp tomato purée
- 1 tbsp soy sauce
- 4 garlic cloves, crushed
- sea salt and freshly ground black pepper

GUACAMOLE
- juice of 1 lime
- 2 ripe avocados, diced
- 1 small red onion, finely chopped
- 2 medium tomatoes, finely diced
- a few sprigs of coriander, finely chopped
- 1 small red chilli, finely chopped
- pinch of cumin

TO SERVE
- guacamole
- 8 flour tortillas, warmed through
- 100g grated cheese
- 200g soured cream

Preparation Method :
1) Mix together the marinade ingredients in a large bowl and season with salt and pepper. Add the chicken to the bowl, mix well and leave it to stand for at least half an hour.

2) Heat the oil in a frying pan. Add the red onions and peppers and fry them over a medium heat for just a few minutes until they have started to soften but still have a little bite to them. Add the chicken to the pan and continue to fry until the chicken is cooked through.

3) To make the guacamole, put the lime juice in a bowl. Add the avocado and turn it in the lime juice immediately. Season with salt and pepper, then mash very briefly so just a few chunks of avocado are broken up. Add the remaining ingredients and stir. This makes more than you need for one sandwich but it will keep in the fridge for a couple of days.

4) Prepare all the side dishes. For the guacamole . Serve everything separately at the table so everyone can assemble their own fajitas.
