apple nut wedges recipe

makes: 8 servings (1 wedge and about 1 tablespoon topping each)

Ingredients : 
- Nonstick cooking spray
- 1 egg
- 2 egg whites
- 2⁄3 cup packed brown sugar*
- 1 teaspoon vanilla
- 1⁄3 cup flour
- ¾ teaspoon baking soda
- 1⁄8 teaspoon salt
- 2 large apples, cored and chopped (2 cups)
- ½ cup chopped walnuts or pecans, toasted
- ½ cup light sour cream
- ¼ cup vanilla low-fat yogurt sweetened with artificial sweetener
- ½ teaspoon vanilla

Preparation Method :
1) Preheat oven to 325°F. Coat a 9-inch pie plate with cooking spray; set aside.

2) In a large bowl combine egg, egg whites, brown sugar, and the 1 teaspoon vanilla. Beat with an electric mixer on medium speed about 1 minute or until smooth. In a small bowl stir together flour, baking soda, and salt. Add flour mixture to egg mixture; stir just until combined. Fold in apples and nuts. Spread batter evenly in the prepared pie plate.

3) Bake for 25 to 30 minutes or until center is set. Cool slightly on a wire rack. Meanwhile, for topping, in a small bowl whisk together sour cream, yogurt, and the ½ teaspoon vanilla.

4) To serve, cut dessert into eight wedges. Serve warm. Spoon about 1 rounded tablespoon of the topping over each serving.

*sugar substitute: Choose Splenda Brown Sugar Blend. Follow package directions to use product amount equivalent to 2⁄3 cup brown sugar.
