thai fruit skewers recipe

makes: 4 servings (2 skewers each)

Ingredients : 
- ½ cup reduced-fat or light unsweetened coconut milk
- 1 tablespoon finely shredded lime peel
- 1⁄8 teaspoon cayenne pepper
- 2 kiwifruits, peeled and quartered
- 4 to 6 1½-inch fresh peeled pineapple pieces
- 4 to 6 1½-inch fresh peeled papaya pieces
- 4 to 6 1½-inch fresh peeled mango pieces
- ¼ cup snipped fresh mint
- ¼ cup shredded coconut, toasted

Preparation Method :
1) In a medium bowl combine coconut milk, lime peel, and cayenne pepper. Add kiwifruit quarters and pineapple, papaya, and mango pieces. Toss to coat. Cover and chill for 1 to 4 hours, stirring occasionally.

2) Drain fruit, discarding coconut milk mixture. Thread fruit pieces alternately on eight 6-inch skewers. Sprinkle fruit with mint and coconut.
