Gluten-Free Easy Fruit Pizza recipe

Ingredients : 
- 1 box (15 oz) gluten-free sugar cookie mix
- 1 egg
- ¼ cup butter, softened
- 3 tablespoons canola or vegetable oil
- 1½ teaspoons gluten-free vanilla
- 1 package (8 oz) ⅓-less-fat cream cheese (Neufchâtel), softened
- ⅓ cup sugar
- 2 kiwifruit, peeled, halved lengthwise and sliced
- 1 cup halved or quartered fresh strawberries
- 1 cup fresh blueberries
- ¼ cup apple jelly

Preparation Method :
1) Heat oven to 350°F. Line 15×10×1-inch jelly roll pan with cooking parchment paper; spray paper with cooking spray (without flour).

2) In large bowl, stir cookie mix, egg, butter, oil and 1 teaspoon of the vanilla until dough forms. Break up dough in pan; press evenly in bottom of pan to form crust.

3) Bake 14 to 16 minutes or until set and edges are light golden brown. Cool completely in pan on cooling rack, about 30 minutes.

4) In small bowl, beat cream cheese, sugar and remaining ½ teaspoon vanilla with electric mixer on medium speed until smooth. Spread mixture over crust. Arrange fruit over filling. Stir or beat jelly with whisk until smooth; spoon or brush over fruit.

5) Refrigerate until chilled, at least 1 hour. Run knife around edge to loosen. Cut into 6 rows by 4 rows. Store covered in refrigerator.
