chicken noodles recipe

Serves : servings 

Ingredients : 
- 200g udon noodles
- 1⁄2 tsp sesame oil
- 1 tbsp vegetable oil
- 2 skinless, boneless chicken breasts or 4 skinless, boneless thighs, cut into strips
- 400g mushrooms, wiped and trimmed, then sliced if large
- bunch of spring onions, sliced, white and green parts separated
- 2 garlic cloves, finely chopped
- 10g root ginger, finely chopped
- 1 tbsp miso
- 150ml chicken stock
- 2 tbsp soy sauce
- 1 tbsp mirin
- 2 sheets of nori, torn into strips
- sesame seeds
- sea salt and freshly ground black pepper

Preparation Method :
1) Cook the noodles according to the packet instructions. They normally take about 10 minutes. Reserve 100ml of the cooking liquid, and toss the cooked noodles in the sesame oil.

2) Heat the vegetable oil in a large wok or frying pan. When the oil is hot enough (the air above it should start to shimmer), add the chicken and mushrooms and sauté them over a medium heat until the chicken is seared and the mushrooms have started to brown and soften. Add the white parts of the spring onions, then the garlic and ginger and fry everything for another minute.

3) Mix the miso with the stock and the reserved cooking water from the noodles and add this to the wok with the soy sauce and mirin. Simmer for a few minutes until the sauce has reduced a little and everything is cooked through. Taste for seasoning and add extra salt or soy sauce if necessary as well as plenty of black pepper.

4) Stir the noodles, nori and green parts of the spring onions into the chicken and mushrooms – the nori should wilt down immediately. Serve sprinkled with a few sesame seeds.
