bruschetta planks recipe

makes: 4 servings (1 cracker and ¼ cup topping each)

prep: 10 minutes       cook: 6 minutes

Ingredients : 
- ½ cup chopped red or yellow sweet pepper
- ½ cup chopped fresh button mushrooms or cremini mushrooms
- ¼ cup chopped onion
- 2 teaspoons olive oil
- 1 medium tomato, seeded and chopped (½ cup)
- 1 clove garlic, minced
- 2 tablespoons snipped fresh basil
- 4 thin whole grain flatbread crackers
- 1 ounce Parmesan cheese, thinly shaved

Preparation Method :
1) In a medium nonstick skillet cook sweet pepper, mushrooms, and onion in hot oil over medium heat for 5 to 7 minutes or until tender, stirring occasionally. Add tomato and garlic. Cook and stir for 1 minute more. Remove from heat. Stir in basil.

2) Spoon tomato mixture evenly on crackers. Top with shaved Parmesan cheese. Serve immediately.
