Migas recipe

Serves : servings 

Ingredients : 
- 200g stale bread, cut into cubes
- 3 tbsp olive oil
- 150g chorizo, sliced
- 1 onion, finely chopped
- 1 red pepper, deseeded and diced
- 2 garlic cloves, finely chopped
- a few sprigs of thyme, leaves finely chopped
- 6 eggs
- 50ml whole milk
- sea salt and freshly ground black pepper

Preparation Method :
1) Put the bread cubes in a bowl, dip your hands in cold water a couple of times and shake the water over the bread. Cover the bread with a damp cloth and leave it to soak for as long as you can – preferably overnight, but for at least 2 hours.

2) Heat a tablespoon of the oil in a large frying pan. Add the chorizo, and cook until it’s well browned on all sides and has given out plenty of oil. Remove the chorizo and set it aside. Add the cubes of bread and fry them for several minutes until they’ve taken on the colour of the chorizo and crisped up – add a little more oil if necessary. Remove the bread from the frying pan and set it aside. Wipe out the pan with some kitchen paper.

3) Heat the remaining olive oil in the frying pan and add the onion and red pepper. Cook for a few minutes until they’re softening around the edges, then add the garlic. Cook for a further couple of minutes and add the thyme. Beat the eggs lightly with the milk in a bowl and season with salt and pepper. Pour the eggs into the pan and cook quickly until the eggs are set but still soft, stirring constantly. Remove the pan from the heat, then stir in the bread and chorizo. Serve immediately.
