spiced chicken with orange salsa recipe

makes: 4 servings (4 ounces chicken and 1⁄3 cup salsa each)

prep: 20 minutes        cook: 8 minutes

Ingredients : 
- 2 medium blood oranges or oranges, sectioned and chopped
- ¼ cup chopped red onion
- ¼ cup snipped fresh cilantro
- 2 cloves garlic, minced
- ½ of a small fresh jalapeño or habanero chile pepper, seeded and minced*
- 2 teaspoons red wine vinegar
- 4 teaspoons canola oil
- ½ teaspoon coriander seeds, crushed
- ½ teaspoon cumin seeds, crushed
- ¼ teaspoon kosher salt
- ¼ teaspoon cracked black pepper
- 4 4- to 5-ounce skinless, boneless chicken breast halves (16 to 20 ounces total)

Preparation Method :
1) For salsa, in a medium bowl combine oranges, red onion, cilantro, garlic, jalapeño pepper, vinegar, and 1 teaspoon of the oil. Set aside.

2) In a small bowl combine coriander seed, cumin seed, kosher salt, and black pepper. Sprinkle mixture over chicken breast halves. Press spice mixture into chicken with your fingers to coat.

3) In a large skillet heat the remaining 3 teaspoons oil over medium heat. Add chicken and cook for 8 to 12 minutes or until chicken is tender and no longer pink (170°F), turning once. Serve chicken breast with orange salsa.

*test kitchen tip: Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the chile peppers, wash your hands and nails well with soap and warm water.
