French toast with berries recipe

MAKES: 4 pieces
PREPARATION: 5 minutes, plus a few minutes soaking
COOKING: 5 minutes

Ingredients : 
- 4 slices thick white bread
- 250 ml (9 fl oz/1 cup) coconut milk
- 90 ml (3 fl oz) unsweetened almond milk 
- 2 tablespoons maple syrup, plus extra for drizzling
- 1 tablespoon plain (all-purpose) flour
- ½ teaspoon ground cinnamon
- 1 pinch salt
- 1–2 tablespoons coconut oil, for frying
- mixed berries, to serve
- sifted icing (confectioners’) sugar, for dusting

Preparation Method :
1) Lightly toast the bread if fresh. Meanwhile, whisk together the milks, syrup, flour, cinnamon and salt. Arrange the bread in a single layer in a wide shallow dish and pour over the milk mixture. Turn to coat and set aside for a few minutes.

2) Melt the oil in a frying pan over a medium–high heat. Add the soaked bread slices and cook for a couple of minutes each side, or until golden. Serve immediately with berries, a drizzle of syrup and a dusting of icing sugar.
