tuxedo cashew turtle cups recipe

MAKES : 16 TURTLE CUPS (RECIPE EASILY DOUBLES)

Ingredients : 
- ½ cup roasted and lightly salted cashews
- 1 ounce caramel squares (12 to 15 squares), melted
- 2¾ ounces semisweet baking chocolate, or a heaping ⅓ cup semisweet chocolate chips
- 2¼ ounces white baking chocolate, or about ⅓ cup white chocolate chips, melted
- 1 tablespoon sea salt

Preparation Method :
1) Line a mini muffin pan with 16 mini muffin liners and put three cashews in the bottom of each liner.

2) Place the caramels, semisweet chocolate, and white chocolate in separate microwave-safe bowls and microwave for 30 seconds on HIGH. Remove from the microwave and stir. If an ingredient is not smooth and completely melted, return it to the microwave and microwave for another 10 seconds, then stir again and see whether you need to microwave any more.

3) Spoon a little bit of the melted caramel over the cashews into the cups.

4) Spoon a little bit of semisweet chocolate on one-half of the cup, on top of the caramel and cashews. Spoon a little bit of white chocolate on the other side of the cup (it’s okay if they don’t touch).

5) Now, gently shake the pan back and forth so that the chocolates settle and touch each other.

6) Sprinkle with the sea salt.

7) Put in the freezer for 30 minutes for fast cooling, or let harden in the refrigerator or even on the counter if you have more time.
