trail mix granola recipe

Homemade granola is delicious as a breakfast served with milk or on top of yogurt. The beauty of this granola is that it uses trail mix, so it is packed full of delicious flavors, such as peanuts and chocolate.

MAKES : 2¼ CUPS GRANOLA ; SERVES 3 TO 4

Ingredients : 
- ¼ cup honey
- 2 tablespoons coconut oil or vegetable oil
- 1 cup quick-cooking oats
- 1 cup trail mix (see note)
- 1 tablespoon flaxseeds (optional)

Preparation Method :
1) Preheat the oven to 325°F and line a baking sheet with parchment paper or a silicone baking mat.

2) In a small saucepan, melt the honey and coconut oil over medium heat until combined and easy to stir.

3) In a large bowl, combine the oats, trail mix, and flaxseeds. Pour the honey mixture over the dry mixture and stir to coat.

4) Spoon the mixture onto the prepared baking sheet, press flat, and bake for 10 minutes, then remove from the oven, stir, and bake for another 10 minutes. Remove from the oven and allow to cool completely before serving. Serve fresh or store in an airtight container.

NOTE :
I like to use a “little bit of everything” trail mix. Any trail mix will work—but I usually like one that includes some mixture of chocolate and dried fruit.
