Tortellini and sausage bake recipe

Serves : 6 to 8

Ingredients : 
- 2 (8-ounce) packages dried or fresh four-cheese tortellini pasta
- 1 tablespoon extra-virgin olive oil
- 1 pound sausage, cut into pieces (see note)
- 1 (24-ounce) jar marinara sauce, roasted garlic flavor
- 1 cup shredded low-moisture, part-skim mozzarella cheese

Preparation Method :
1) Preheat the oven to 375°F.

2) Cook the tortellini according to the package instructions (about 10 minutes for dried, quicker for fresh). When they’re almost done (al dente), remove from the heat and drain.

3) Heat the olive oil in a skillet and fry the sausage pieces over high heat, stirring occasionally, to brown them slightly, 5 minutes.

4) Pour the tortellini into a 9 × 12-inch baking dish and then put the cooked sausage pieces on top. Next, pour the marinara sauce on top and sprinkle with the cheese. Bake for 15 minutes, or until the cheese is golden brown.

5) Remove from the oven, allow to cool for 5 minutes, and serve.

NOTE :
I usually buy chicken or turkey sausage; any sausage will work for this dish. My favorite is garlic and mozzarella chicken sausage.
