tofu ricotta recipe

MAKES ABOUT : 3 CUPS (370 G)

Ingredients : 
- 2 tsp (10 ml) extra virgin olive oil
- 1 cup white or yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 (14-oz [410-g]) package firm tofu, drained
- 1½ tsp (7.5 g) salt, plus more to taste
- 1 tsp freshly ground black pepper, plus more to taste
- 2 tbsp (30 ml) fresh lemon juice
- 3 cups (70 g) fresh basil

Preparation Method :
- Heat the olive oil in a large skillet over medium heat. Add the onions and sauté until soft, about 5 minutes. Stir in the garlic and cook another 30 seconds. Remove from heat.

- Place the cooked onions and garlic in a food processor along with the tofu, salt, pepper, lemon juice and basil. Pulse until just combined. You want it to be similar in texture to ricotta—creamy but not pureed. Season to taste, if needed.
