Tilapia Tacos recipe

Serves : servings 

Ingredients : 
- 1 tablespoon extra-virgin olive oil
- 10 ounces tilapia fillets (4 fillets)
- 1 tablespoon taco seasoning, store-bought or homemade , divided
- 1 (12-ounce) package steam-in-bag frozen fire-roasted Mexican corn blend (see notes)
- 8 tortilla shells

Preparation Method :
1) In a large skillet over high heat, heat the olive oil for 1 minute, then add the tilapia fillets and sprinkle a pinch of taco seasoning on each of the fillets. Cook for 3 minutes, then flip and cook for another 3 minutes, sprinkling with the remaining taco seasoning. There should be no more translucent parts to the tilapia when it is done; I usually cut one of the fillets in half to check for doneness.

2) While the fish cooks, heat the frozen vegetables according to the package instructions and warm the tortillas (I do so by heating them in a 350°F oven for 3 minutes).

3) To assemble the tacos, place ½ tilapia fillet in a tortilla and spoon the corn mixture on top, then serve and enjoy.

NOTES :
Any frozen corn blend would work; one with southwestern flavors is always good.
