sicilian kale salad with orzo recipe

Serves : servings 

Ingredients : 
- 1 cup (200 g) orzo pasta
- 1 tbsp (15 ml) extra virgin olive oil
- 1 large bunch kale, preferably Tuscan (black) kale, stems removed, leaves torn into bite-sized pieces
- 2 cloves garlic, minced
- ¼ cup (40 g) raisins
- ⅛ cup (30 ml) balsamic vinegar
- ¼ cup (40 g) pine nuts, toasted
- Salt and freshly ground black pepper
- ¼ cup (25 g) Parmesan cheese, freshly shaved

Preparation Method :
1) Make the pasta. Bring a large pot of salted water to a boil. Add the orzo, reduce heat to medium-low and cook until al dente, about 8–9 minutes. While the pasta is cooking, make the sauce. Drain and set aside.

2) Heat the olive oil in a large saucepan over medium high heat and add the kale. Cook for 3–4 minutes, until just wilted. Add in the finely minced garlic, it should melt when warmed with the kale. Remove from heat and stir in the raisins, balsamic vinegar, toasted pine nuts and salt/pepper to taste.

3) Toss with the orzo pasta and stir in the Parmesan cheese.

VEGAN VERSION: Replace Parmesan Cheese with Vegan Parmesan Cheese, same amount.
