MAKES ABOUT : 2 HEAPING CUPS SALSA

Ingredients : 
- 2 (14.5-ounce) cans diced tomatoes, drained (see notes)
- ¼ cup fresh cilantro
- ½ medium red onion
- 2 garlic cloves
- 1 jalapeño pepper (see notes)
- 1 teaspoon salt

Preparation Method :
1. Place all the ingredients in a food processor (see notes) and process for 15 seconds. Scrape down the sides and process for another 5 seconds. Pour into a bowl or storage container and refrigerate for 1 hour (or overnight). Alternatively, you can put the salsa in the freezer for 10 minutes, then enjoy.

NOTES :
Instead of plain diced tomatoes, you could mix up the flavors by adding diced tomatoes with chiles or other flavors. Depending on how spicy you like your salsa, you could use half the amount of jalapeño or double; it’s all about your spice level preference: With one jalapeño, the salsa is medium spicy. If you don’t have a food processor, you can chop all the ingredients and make it into a pico de gallo (a fresh chopped salsa).
