quick marinara sauce recipe

MAKES ABOUT : 2 HEAPING CUPS MARINARA PERFECT FOR 1 POUND OF PASTA

Ingredients : 
- 2 tablespoons extra-virgin olive oil
- 1 small onion, finely chopped
- 1 garlic clove, pressed
- 2 pounds fresh tomatoes, chopped (about 6 large tomatoes)
- 2 tablespoons tomato paste
- 1 teaspoon salt
- ¼ teaspoon freshly ground black pepper

Preparation Method :
1) In a large pot with a lid over medium heat, heat the olive oil for 1 minute, then add the onion and cook for 3 minutes, stirring occasionally. Add the garlic and sauté for another 2 minutes, and add the tomatoes and tomato paste. Sprinkle with the salt and pepper. Bring to a boil, lower the heat to low, cover, and simmer for 20 minutes.

2) Allow to cool slightly, pour into a food processor, and process for 10 seconds (pulsate for a few additional seconds if there are still any chunks remaining). Use immediately or store in an airtight container in the refrigerator; the sauce will last for up to 2 weeks in the refrigerator (see note).

NOTE :
If I have leftover marinara sauce, I freeze it; it keeps frozen for up to 3 months.
